"Bobby’s Lighter Chicken Pot Pie
Ingredients:
2 cups cooked cubed chicken
2 cups frozen mixed vegetables
1 cooked cubed all-purpose potato
2 (10 3/4-ounce) cans fat-free cream of mushroom soup
1/2 cup fat-free milk
8 (12 x 17-inch) sheets thawed frozen phyllo dough
Directions:
Preheat the oven to 375°F degrees.
Combine the chicken, mixed vegetables, and potato in a large bowl. Stir in the soup and milk until well blended. Ladle about 1 1/4 cups chicken mixture into each of 4 ovenproof bowls. Place bowls on a jelly-roll pan.
Stack the phyllo sheets. Roll up, starting at a long side, then cut into 1/2-inch strips. Place the strips in a large bowl tossing to separate the strips. Spray the strips with nonstick spray and arrange over the chicken mixture. Lightly spray the tops with nonstick spray. Bake until the filling is hot and the phyllo is browned, 25 – 30 minutes.

Ok, it is 3:46 in the afternoon and I have not done it yet. The menu I mean. We did go out until about 1:30 and I have been outside talking for a while. So tonights dinner is handled. My dh will be making ribs, we have potato salad and beans as well.

How frustrating... to lose my post, not like anyone reads it....short story long....
My new resolve to eat better was trashed late tonight so because I believe that the majority of my "eating issues" are poor planning (and lack of control) tomorrow my only goal is to ......
make a menu and a shopping list for the rest of the week.....

Ok I am all alone in cyberland. No ones reading this and I really don't care. I have not put this blog as private just to see if anyone will actually try and follow it.
Here it is. I am not overly unhappy with my life but there are some key issues I need to work on.
My weight....ugh, it will be a focus, but just so I am happier with myself. I get to a point where it bothers me. It doesn't bother my husband, my kids could care less so this is for me.
I am part of a blended family...wow that is tough. We have been together for a while now and each and every day can bring new challenges. It doesn't always but it can.
Mother to disabled child. Now I wonder about posting this, but considering I am on other lists, etc, and I will probably not be going into great detail then I think it is ok. It puts challenges on me daily as well as our family. Our other kids have issues (who's kids don't?) but one of our children is on the ASD spectrum. It is a new road for us. Even though I have dealt with it since her birth, I did not really know what I was dealing with. Maybe I look to this blog to be supportive to other parents who are a bit unhappy with themselves and are going through some of the same things I am.
So I have goals.....do I list them here or not? That is something I will think about today. Really besides me, who cares....lol
Anyway here I am, read it, don't read it. Either way, Have a wonderful day!
